1. Raw material cleaning. Carrots used as raw materials are first cut off by the knife blade, and then the water is used to clean the sediment and impurities.

2. Peel. Alkali liquid peeling can be used. The alkali-treated raw material is immediately rinsed with flowing water for 2-3 times, and then the residual skin is trimmed with a knife. When the lye is peeled, the concentration of the sodium hydroxide solution is 8% to 12% and the temperature is 90°C. The time for soaking alkali or lye is 1 to 3 minutes.

3. Slicing. Cut into small squares with a knife or vegetable cutter.

4. Blanching. Boil with boiling water or steam 2 to 3 minutes, permeate prevail, but not hot soft.

5. Color protection. Soak it in a 15% sodium sulfite solution for 5 minutes to prevent discoloration, then rinse with water once.

6. Dry. Conditions can use a dryer, you can also use the drying room. Baking at a temperature of 65-75°C for about 6 hours results in dehydrated carrot pellets. Dry product moisture content of 5% to 8%.

7. Softening and briquetting. Generally, softening should be performed before packaging, that is, the dried products are piled together. After 1 to 3 days, the moisture content can be uniform. After the product is dried, it can be molded by hot pressing. After the compaction, the volume is reduced to about 1/3 of the original volume.

8. Packing. The compacted carrot pellets have a moisture content of no more than 8% and can be packaged. Small packaging and more use of opaque composite film vacuum or nitrogen sealed packaging.
